4 red peppers
2 cups extra-virgin olive oil
1 Tbsp thyme (finely chopped)

Preparation steps

1.
Pre-heat the oven to 220°C | 425F | gas 7.
2.
Place the peppers directly on an oven rack near the top and roast for 15-20 minutes. Turn occasionally and remove when the skins are scorched and blackened.
3.
Transfer to a bowl and cover with clingfilm to ensure they are well sealed inside. Allow to cool for 10-15 minutes.
4.
After 15 minutes, remove from the bowl and use your hands to remove the skin, which should come away easily. Rinse under cold water and remove the stalks and seeds.
5.
Cut into 1 cm wide strips and transfer to a bowl.
6.
Cover with the olive oil and chopped thyme and allow to marinate for at least 30 minutes.
7.
When ready to serve, garnish with thyme sprigs and season.
