Bell pepper (2 red, yellow and green)
100 milliliters olive oil
3 Tbsps balsamic vinegar
4 garlic cloves
2 sprigs fresh thyme
salt
freshly ground peppers

Preparation steps

1.

Preheat oven to 220°C (approximately 425°F) top heat.

Rinse the peppers, trim, remove the seeds and white membranes and cut the flesh lengthwise into quarters. Place skin side up on a baking sheet and bake for about 15-20 minutes until the skin blisters. Remove from oven, let cool slightly and peel.

3.

Peel the garlic cloves and cut into thin slices and then sauté in 1 tablespoon oil.

4.

Mix the remaining oil with vinegar, season with salt and pepper, mix with the pepper quarters, garlic slices and thyme leaves and place in a shallow dish.

5.

Cover and marinate in the refrigerator at least 12 hours. Remove from the refrigerator and serve.
