- 3 ¾ cups Green beans
- 2 shallots
- 2 cloves garlic cloves
- 2 Anchovy fillet
- 1 Tbsp olive oil
- 1 Tbsp chopped parsley
- 2 Tbsps white wine vinegar
- salt
- freshly ground peppers

Preparation steps

Cook the beans in plenty of salted, boiling water for about 5 minutes, until al dente. Drain, refresh in cold water and drain thoroughly. Peel the shallots and garlic. Finely dice the shallots and press the garlic. Rinse and finely chop the anchovy fillets. Heat the olive oil in a frying pan and sweat the shallots until translucent. Stir in the garlic, anchovies and parsley and add the vinegar.

Mix the beans with the marinade, cover and leave to stand for about 30 minutes. To serve, sprinkle with freshly ground pepper.
