Marinated Dandelion Buds
In a pot, combine salt, peppercorns, and herbs with about 400 ml (approximately 1 3/4 cup) water. Bring to a boil. Remove from heat and add dandelion buds. Let infuse about 15 minutes.
Drain dandelion buds and divide among hot, rinsed jars.
Cover with olive oil and let stand at least 1 week in the refrigerator.
