¾ oz Yeast
3.333 cups flour
1 tsp salt (level)
4 Tbsps olive oil
Tomato sauce
1 ¼ cups canned, chopped Tomatoes
1 shallot
1 clove garlic cloves
1 Tbsp olive oil
½ tsp dried oregano
1 pinch sugar
salt
cayenne pepper

4 Tomatoes
1 bunch Arugula
Oil (for the baking tin)
flour (for the baking tin)

freshly ground peppers
2 balls Mozzarella
4 Tbsps olive oil

Preparation steps

For the tomato sauce, peel and finely chop the shallot and garlic. Heat the oil and sweat the shallot and garlic until translucent. Add the tomatoes and simmer for about 15 minutes, until reduced slightly. Then season with salt, pepper and oregano and leave to cool.

For the pizza base, dissolve the yeast in 200 ml lukewarm water, add to the flour, salt and olive oil and knead to a smooth dough. Use more or less water as necessary. Put the dough into a bowl, cover with clingfilm and put in a warm place to rise for about 30 minutes. Preheat the oven to 220°C with top and bottom heat.

Sort and wash the rocket, removing any hard stalks, and spin dry. Brush pizza pans with oil and dust with flour.

Divide the dough into four pieces and roll each out to a circle on a floured work surface. Place in the prepared pans. Spread each pizza base with tomato sauce. Wash the tomatoes, remove the stem ends and slice the tomatoes. Arrange the slices on top of the pizzas. Season with salt and pepper and sprinkle with olive oil. Slice the mozzarella, arrange the slices on top of the pizzas and bake in the preheated oven for 15 to 20 minutes, until golden brown. Serve garnished with rocket.
