- 1 cup cooked Quinoa
- ¾ cup all-purpose flour
- 2 tsps Baking powder
- ½ tsp salt
- 1 large egg
- 1 large egg white
- 1 Tbsp butter (melted)
- ¼ cup milk
- 2 Tbsps Maple syrup
- vegetable oil (for greasing)
- To serve
- Pear compote
- plain Yogurt
- To decorate
- mint

Preparation steps
1.
Mix together the quinoa, flour, baking powder and salt in a mixing bowl.
2.
Whisk together the egg, egg white, butter, milk and maple syrup until smooth. Add the egg mixture to the flour mixture and whisk to combine.
3.
Lightly grease a frying pan and heat over a medium heat.
4.
Cook tablespoonfuls of the batter for about 2 minutes, until bubbles appear on top. Turn them over and cook for a further 2 minutes until golden brown on the underside. Repeat with more oil and the remaining batter.
5.
Serve with pear compote and yoghurt and decorate with mint leaves.
