150 grams Strawberries
2 tsps sugar
1 sheet white gelatin
1 Mango
5 tsps Lime juice
100 milliliters Whipped cream
Lemon balm (for garnish)

Preparation steps

Rinse and dry the strawberries, setting two aside for the garnish. Cut the remaining strawberries into quarters and sprinkle with sugar. Soak the gelatin in cold water.

Peel the mango, remove the core and dice the flesh. Puree the mango and strawberries and strain through a sieve. Squeeze the gelatin well and dissolve in a pot with a little water. Stir 1 tablespoon of the mango puree into the gelatin. Carefully fold the rest of the gelatin into the mango and season with lime juice. Whip the cream until stiff and fold into the mixture. Chill for at least 1 hour. Serve garnished with strawberries and lemon balm.
