1 kilogram jam sugar (1:1 ratio)

Preparation steps

Peel the mango and cut the fruit from the stone. Coarsely chop one half of the fruit, and finely dice the other half. Puree the coarsely chopped fruit. Peel the limes and remove the whole fruit segments. Catch any juice released in a bowl. Add both to the dice mango, then add the puree. Weigh the mixture, then mix with the same amount of sugar. Mix in the kaffir lime leaves, and set aside for 2 hours.

Bring the mixture to a boil, and cook for 4 minutes. Divide into prepared jars, seal tightly, and let cool completely.
