Peel and quarter onions. Peel and core apples, cut into 1/2 cm (approximately 1/5 inch) cubes. Rinse and shake dry thyme, pluck off leaves. Combine onions, apples, thyme, cinnamon, balsamic vinegar and jam sugar in a pot and let stand for 30 minutes.

Bring to a boil, stirring, and simmer for about 3-4 minutes. Remove cinnamon stick and pour marmalade into prepared preserving jars. Seal well and turn upside down, let cool for 5 minutes. Return to normal position and keep in a cool place.

Before serving, decorate jars with a ribbon.
