30 grams ginger
1 kilogram Mandarin orange
200 milliliters Pear juice
1 stalk cinnamon
500 grams jam sugar (2:1 ratio)

Preparation steps

Peel and julienne the ginger. Peel 1/3 of the mandarin oranges, remove the bitter white pith, and cut into small pieces. Squeeze the juice from the remaining mandarin oranges. Mix the juice with the fruit pieces and measure how much the mixture weighs. Add enough pear juice to reach 1 kg (approximately 35 ounces). in weight. Mix in the cinnamon and the ginger, and stir to combine.

Mix the mandarin mixture with the sugar in a large pot. Bring to a boil over high heat, stirring constantly. Cook for 4 minutes, until the jam begins to thicken. Remove the cinnamon, and fill the prepared jars to the brim with the jam. Seal tightly and turn upside down to cool for 10 minutes. Turn right side up and cool completely.
