- For the cookies
- 1 cup unsalted butter (diced)
- 2 ½ cups all-purpose flour
- 1 cup powdered sugar
- 2 egg yolks
- 1 tsp vanilla extract
- 1 Tbsp caster sugar
- For the filling
- 10 white Marshmallow
- To decorate
- ½ cup powdered sugar
- 1 tsp hot water

Preparation steps
1.
Put the butter and flour into a food processor and blend until the mixture resembles breadcrumbs. Alternatively rub the butter into the flour in a mixing bowl.
2.
Stir in the sugar, egg yolks and vanilla and mix to a soft dough. Form into a ball, wrap in cling film and chill for 30 minutes.

Heat the oven to 200°C (180° fan) 400°F gas 6. Line 2 large baking trays with non-stick baking paper.
4.
Roll out the dough on a lightly floured surface, about 5mm thick. Cut into 20 squares and place on the baking trays. Sprinkle with caster sugar.

Bake for 10 minutes until lightly golden. Place a marshmallow on 10 cookies and return to the oven for 1-2 minutes until the marshmallows have melted. Place a plain cookie on top of each marshmallow cookie.
6.
Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
7.
To decorate: sift the icing sugar into a bowl and add hot water to form a smooth icing. Drizzle over the top of each sandwiched cookie and leave to set.
