Preparation steps
1.
Heat the oven to 160°C/140°C fan/325°F/gas 3. Cut out two sheets of baking parchment as large as the baking trays. Put the flours, salt, cocoa, sugar and baking powder into a bowl. Add the butter and rub in until the mixture resembles breadcrumbs. Mix together the honey and milk. Add to the dry ingredients and mix well to a firm dough. Add a little more milk if necessary.
2.
Knead the dough until smooth. Cut in half and place one piece in a plastic bag. Take the other piece and roll out thinly between the two sheets of baking parchment.
3.
Using a 6cm plain round biscuit cutter, stamp out 16 rounds. Remove the excess dough. Leave the biscuits on the baking parchment and slide onto the baking tray. Repeat with the remaining dough.
4.
Bake in the oven for about 15 minutes. Remove and cool on a wire rack. When cold spread a little marshmallow creme on half the biscuits. Top with the remaining biscuits.
