200 grams dried thick white Beans
1 bay leaf
150 grams small button Mushroom
150 grams lamb's lettuce
1 garlic clove
lemons (juice)
5 Tbsps olive oil
salt (and pepper)

Preparation steps

1.

Bring beans to a boil with about 1 liter (approximately 4 1/4 cups) of water and the bay leaf. Boil for 2 minutes, remove from heat and let stand at least 1 hour, then return to the boil, cover, reduce heat and cook over low heat until soft, 45-60 minutes. After 30 minutes, season with salt. Drain beans.

Trim mushrooms and cut into slices.

Season lemon juice with salt and pepper, press in the garlic and stir in the olive oil.

Mix salad dressing with mushrooms and beans and marinate at least 30 minutes.

5.

To serve, rinse mache, trim, spin dry and mix with the mushrooms and beans. Arrange on plates.
