- 2 Tbsps sunflower oil
- 4 center-cut Pork chop (trimmed)
- 1 large onion (chopped)
- 4 medium carrots (peeled and diced)
- 4 sticks Celery (peeled and diced)
- 2 cloves garlic cloves (chopped)
- 2 cups canned Tomatoes
- 1 Tbsp tomato puree
- 3 cups ham stock
- 1 Bouquet garni
- 4 sprigs thyme
- salt
- freshly ground Black pepper

Preparation steps

Heat the oil in a casserole dish set over a moderate heat until hot. Season the pork chops and seal in the oil until golden all over.

Reduce the heat a little and add the onion, carrot, celery, garlic, chopped tomatoes, puree, and stock, stirring well.
3.
Tuck the bouquet garni into the dish and continue to cook until the broth is simmering. Pour everything into a slow cooker, cover with a lid, and cook on a medium setting for 4 hours.

Once the pork is cooked, season the dish with salt and pepper. Serve with a garnish of thyme.
