- 2 lobsters (About 500 grams or approximately 1 lb)
- 1 Baguette
- ½ Cucumber
- 1 bunch Tarragon
- 1 shallot
- 2 Tbsps Mayonnaise
- salt
- peppers

Preparation steps
1.
Place the lobster headfirst into boiling water and cook covered for 3 minutes, then remove and rinse with cold water. Crack the lobster and extract the meat from the tail, claws and joints. Cut the tail meat into thick slices.
2.
Peel the cucumber and cut into slices.
3.
Rinse the tarragon and spin dry.
4.
Peel the shallots and chop finely.
5.
Cut the baguette in half horizontally and spread mayonnaise over one side. Layer the cucumber and lobster and sprinkle with shallots. Season with salt, pepper and tarragon, then replace the other half of the bread. Cut and serve in four equal pieces.
