400 grams Tomatoes
mint (2 tablespoons chopped)
parsley (2 tablespoons chopped)
3 Tbsps olive oil
2 Tbsps lemon juice
2 Tbsps Caper
2 scallions

Preparation steps

1.

Cook linguine in boiling salted water and drain well. Blanch tomatoes for a few seconds, rinse in cold water, peel, quarter, core and dice finely. Rinse scallions, trim and cut into thin rings.

2.

Mix herbs with olive oil, lemon juice, capers and scallions and season with salt and pepper. Mix drained linguine with tomatoes and vinaigrette, arrange on plates and serve sprinkled with Parmesan.
