- 500 grams Linguine
- salt
- 1 handful Arugula
- 1 large organic lemon
- 2 mild chili peppers
- 5 fresh garlic cloves
- 80 milliliters olive oil
- freshly ground peppers
Preparation steps

Cook the linguine in boiling salted water until al dente. Rinse the arugula and shake dry. Rinse the lemon in hot water, and remove the zest in strips (making sure not to remove any of the white pith). Thinly slice the strips of zest. Squeeze the juice from the lemon. Rinse and trim the chilis. Halve lengthwise, remove the seeds, and finely dice. Peel the garlic.

Heat the oil in a large pan. Pass the garlic through a press into the pan, and sauté over medium heat. Add the chilis, drained linguine, lemon juice, and lemon zest. Toss to combine, then season to taste with salt and pepper. Transfer to plates, top with the arugula, and serve.
