Lemon Grilled Chicken
Rinse roasting hen and pat dry.
Rinse 1 lemon in hot water pat dry and finely grate zest. Mix half the lemon zest with honey, 2 tablespoons oil, salt and pepper and rub the chicken with it.
Cut remaining lemon into slices and fill the chicken with it.
Tie legs together with kitchen string and fold wings onto the back.
Lay prepared chicken on a grill with a lid. Continue to turn the chicken to ensure cooking is uniform on all sides.
Rinse potatoes and prick shells with a fork. Toss with 2 tablespoons oil, sprinkle with salt and thyme along with branches and add to chicken on the grill and cook for 30 minutes.
In the last 10 minutes of cooking, drizzle 2 tablespoons oil and salt over asparagus and add to grill if desired. Serve immediately.
