Preparation steps

1.

Rinse and trim the leeks. Remove the green parts of the leeks. Rinse the light green and white parts thoroughly. Blanch the leeks in boiling salted water for 4-5 minutes. Remove from the water and drain thoroughly. 

2.

Mix the vinegar with the mustard. Gradually incorporate the oil. Season to taste with salt, pepper, and sugar. Arrange the leeks on plates, and serve with the dressing.
