For the dough
200 grams Pastry flour
200 grams Whole wheat flour
20 grams fresh Yeast
1 Tbsp butter
1 tsp salt

For the covering
3 sticks Leeks (750 g)
300 grams acid Whipped cream
100 grams grated Cheese (mountain cheese such as Gruyère)
4 eggs
75 grams Walnut

Preparation steps

For the dough: Knead both types of flour in a bowl and form a well. Crumble the yeast and mix with 50 ml of lukewarm water. Add to the dough. Sprinkle with flour, cover and let rise for about 30 minutes.

For the covering: Add butter, salt and about 225 ml of lukewarm water in a bowl. Knead to a smooth dough until it disengages from the edge of the bowl. Cover and leave aside for approximately 30 minutes. Knead the dough again and roll out into a thin sheet on a floured metal rack. Cover and leave aside for approximately 15 minutes.

Preheat oven to 200°C (approximately 400°F).

For the filling: Rinse the leeks and cut diagonally into rings. Sauté in hot butter for 2-3 minutes until translucent and remove from the fire. Mix the sour cream with the cheese, eggs and chopped walnuts. Season with salt, pepper and nutmeg. Sprinkle the cooked leeks on the pastry. Add the eggs and cream mix. Bake in oven for 35-40 minutes until golden brown. Serve hot or lukewarm.
