- ½ inch fresh ginger (peeled and finely grated)
- 1 large Grapefruit (filleted, juice retained)
- 2 unwaxed Oranges (filleted, juice retained)
- 1 Tbsp runny honey
- 2 Tbsps Peppermint (cut into strips)
- Lemon verbena (to garnish)

Preparation steps
1.
Mix together the ginger and the fruit and mix together 2 tbsp of grapefruit juice and 2 tbsp orange juice with the honey.
2.
Transfer half the grapefruit fillets into glasses and place half the orange fillets on top. Top with half the mint. Add the remaining orange fillets and cover with the rest of the grapefruit. Finish with the remaining mint and drizzle with the honey-juice mixture. Serve garnished with lemon verbena.
