- 2 cups mixed, fresh Berry (e. g. redcurrants, strawberries, raspberries, blueberries, blackberries)
- 1 Tbsp lemon juice
- 1 Tbsp runny honey
- For the yoghurt
- 1 ⅛ cups natural Yogurt
- ⅞ cup low-fat Quark
- ¼ lemon (zest grated)
- 1 Tbsp Vanilla sugar
- ⅔ cup powdered sugar
- ⅔ cup cream (whipped)
- To garnish
- Red currant
- sugar
- fresh mint

Preparation steps
1.
Mix the berries with the lemon juice and honey and leave to steep for around 20 minutes.
2.
Mix together the yoghurt, quark, lemon zest, vanilla sugar and icing sugar until smooth. Fold in the whipped cream.
3.
Place alternate layers of the yoghurt cream and berries in four decorative glasses.
4.
Roll the berries in the sugar and attached to the rims of the glasses. Serve garnished with mint leaves.
