- 4 large, firm Peaches (skinned, stones removed & halved)
- ¼ cup unsalted butter
- ¼ cup caster sugar
- 1 egg yolk
- 2 ozs Amaretti biscuits (or macaroons)
- ¾ cup chopped almonds
- 2 tsps dried Lavender
- 2 Tbsps Almond liqueur (or orange juice)
- To serve
- Whipped cream
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Enlarge the cavities of the peaches by hollowing out some of the flesh. Put the peach halves in a baking dish.

Beat the butter and sugar until pale, then beat in the egg yolk.
3.
Stir in the hollowed out peach flesh, amaretti and almonds. Spoon into the centre of the peaches and scatter with lavender.
4.
Pour over the amaretto, or orange juice. Bake for 20-25 minutes, until the peaches are soft and the topping is golden. Serve hot or cold with whipped cream.
