Laughing Vegetable Soup

- 2 scallions
- 350 grams potatoes
- 150 grams Celery
- 1 carrot
- 200 grams Broccoli
- 2 Tbsps butter
- 900 milliliters Vegetable broth
- 150 milliliters Whipped cream
- 4 slices Toast
- ½ bunch Chives
- salt
- freshly ground peppers
- Nutmeg (freshly grated)
- 2 Pumpkin seed (roasted)
- 2 peppercorns
Preparation steps
Rinse scallions and cut into rings.
Peel, rinse and dice potatoes, celery and carrots.
Rinse broccoli and pat dry.
Sauté whole vegetables in 1 tablespoon hot butter, then pour in broth. Cover and simmer about 25 minutes until soft, stirring occasionally.
Meanwhile, whip cream until creamy. Remove bread crust, toast and cut out 4 half moon shapes to use as mouths. Cut remaining bread into small cubes. fry in hot butter until golden brown and drain on paper towels. Cut chives into rolls.
Puree soup, stir in cream (up to 4 tablespoons) and maybe add a little broth (depending on desired consistency.) Season with salt, pepper and a pinch of nutmeg and pour into soup bowls. Add bread crusts to soup to form mouths and use croutons and chives for hair. Put two blobs of cream into soup for eyes and use pumpkin seeds as pupils. Add peppercorns as nostrils and serve.
