1 Rack of lamb (About 2 kg)
50 grams clarified butter
salt

200 grams Black bread
2 garlic cloves
1 sprig marjoram
1 sprig thyme
½ bunch parsley
100 grams mild Feta
2 egg yolks
1 egg
Mustard
freshly grated Nutmeg

Preparation steps

1.

Trim lamb rack and score fat layer in diamond pattern. Season with salt and pepper and arrange in a roasting pan (or a wire rack with dripping pan underneath).

Heat clarified butter in a frying pan and pour over lamb. Roast in preheated oven at 250°C (approximately 475°F) for about 20-25 minutes or until fat is crispy brown. Crumble black bread. Peel and finely chop garlic. Rinse herbs, shake dry and chop.

Cut feta cheese into small cubes. Whisk egg in a bowl, add egg yolks and 1 teaspoon of mustard. Add breadcrumbs, cheese, garlic and herbs, season heavily with salt, pepper and nutmeg.

Spread mixture with a spoon on meat. Reduce heat to 200°C (approximately 400°F) and roast for 30-40 minutes more. Remove from oven and let rest for 10 minutes. Slice and serve.
