- 1 kilogram lamb (such as shoulder)
- 2 onions
- 2 garlic cloves
- 2 Tbsps vegetable oil
- 2 Tbsps Tomato paste
- 150 milliliters dry white wine
- 500 milliliters lamb stock
- 6 Tomatoes
- 2 green Hungarian wax peppers
- salt
- ground Cumin
- freshly ground peppers

Preparation steps
1.
Rinse meat, pat dry and cut into cubes. Peel onions and garlic and dice finely.

Heat oil in a saucepan and brown meat on all sides. Add onions and garlic and cook together for 2-3 minutes. Add tomato paste and wine. Add broth.

Blanch tomatoes and peel, quarter and core and cut pulp into pieces. Rinse peppers, halve and remove seeds and ribs, chop. Add peppers and tomatoes into a pot, season with salt, cumin and pepper and add broth if needed. Simmer on low heat for about 1.5 hour. Pour into bowls and serve.
