- For the skewers
- 1 kilogram lamb (from the leg boneless)
- For the marinade
- 6 Tbsps olive oil
- 2 Tbsps balsamic vinegar
- 1 Tbsp lemon juice
- 1 Tbsp oregano
- 1 garlic clove (chopped)
- salt
- peppers
- vegetable oil (for serving)
- Lemon wedge (for garnish)

Preparation steps
1.
For the skewers, cut the meat into bite-sized cubes, removing tendons and fat. Thread onto skewers.

For the marinade, mix oil, vinegar, lemon juice, oregano and garlic. Season with salt and pepper. Place the meat skewers in a flat container and baste well with the marinade. Cover and marinate for 2-3 hours in the refrigerator

Remove the skewers from the marinade, drain the oil and cook skewers on a preheated grill for 5-8 minutes.
4.
Place skewers on plates, drizzle with additional olive oil (if desired), season with pepper and serve garnished with lemon wedges.
