- 12 lamb chops
- For the marinade
- 5 Tbsps olive oil
- ½ tsp dried thyme
- ½ tsp Dried rosemary
- 2 garlic cloves (finely chopped)
- Plus
- 4 Tomatoes (cut into thick slices)
- 2 Tbsps olive oil
- 1 bunch Basil (finely chopped)
- 1 lemon (zest grated)

Preparation steps

Mix together all the marinade ingredients, place the meat in the marinade, cover and leave to marinate overnight - turn once.
2.
Preheat the grill and let the chops dry. Season with salt and grill for 2-3 minutes on each side. Season the tomato slice with salt and ground black pepper, drizzle with olive oil and place under the grill as well. Serve garnished with the basil and lemon zest.
