- For lamb
- 8 small Lamb cutlets
- 4 Tbsps olive oil
- 2 peeled garlic cloves
- 1 organic Lime
- 1 bay leaf
- salt
- freshly ground peppers
- clarified butter (for sauteing)
- For polenta
- 1 Tbsp butter
- 1 shallot
- 125 instant Polenta
- 350 milliliters Vegetable broth
- 100 grams Blue cheese

Preparation steps

For the lamb chops, place together in a bowl.

Combine the olive oil, finely chopped garlic cloves, lime zest and juice of the squeezed lime, and bay leaf. Season with salt and pepper. Toss the lamb in the marinade. Let the meat sit in the marinade for 1-2 hours, tossing occasionally.

For the polenta, melt the butter in a pot. Peel the shallots and chop finely. Saute the shallots in butter until translucent. Add the polenta and deglaze with the broth. Cook, stirring occasionally for 10 minutes. Cut the blue cheese into small pieces.

Heat the clarified butter in a pan and brown the lamb chops, about 3-4 minutes on each side.
5.
Stir in the cheese into the hot polenta. Serve the polenta with lamb chops.
