- ⅛ cup butter
- 1 Tbsp Oil
- 1 onion (chopped)
- 16 ozs Lamb fillet (diced)
- 1 small Turnip (diced)
- 2 large carrots (roughly chopped)
- 2 potatoes (peeled and diced)
- ¼ cup Pearl barley
- 1 ½ liters lamb stock
- 1 Leek (thinly sliced)
- 1 stick Celery (sliced)
- salt
- peppers
- To garnish
- thyme

Preparation steps
1.
Heat the butter and oil in a large pan and cook the onion and lamb over a high heat until browned.
2.
Add the rest of the ingredients, except the celery and leeks and bring to a boil.
3.
Season with a little salt and simmer gently for 1 1/2- 2 hours until the lamb is tender, adding the leeks and celery to the pan after 1 hour. Season to taste with salt and pepper
4.
Ladle into serving bowls and sprinkle with thyme.
