1 kilogram small Kohlrabi
salt
1 Tbsp butter (for greasing)
250 milliliters Whipped cream
3 eggs
150 grams grated Gruyere
peppers (freshly ground)
Nutmeg (freshly grated)
½ bunch scallions
2 Tbsps Bacon (streaky, smoked and diced)

Preparation steps

Preheat the oven to 220°C (approximately 425°F).

Peel the kohlrabi and cut into slices. Cook in boiling salted water until tender-crisp, about 3 minutes. Remove and drain. Grease a large baking dish (or 4 small). Place the kohlrabi in the baking dish in a single layer. In a bowl, blend the crean with the eggs and cheese, and season with salt, pepper and nutmeg to taste. Rinse the scallions and thinly slice. Sprinkle over the kohlrabi. Pour the sauce over the vegetables and bake until the kohlrabi is tender and the sauce is bubbling, about 25 minutes. Cook the bacon in a frying pan until crispy. Drain on paper towel. Once cool enough to handle, crumble the bacon.

Serve the gratin sprinkled with the crumbled bacon.
