4 Kohlrabi (each about 250 grams)
75 grams Sesame seeds
4 egg yolks
200 grams Sour cream
300 grams Frisée
1 Tbsp lemon juice
1 tsp sharp Mustard
Tilsit cheese (6 slices)
Emmentaler cheese (6 slices)
4 Tbsps clarified butter
salt
freshly ground peppers

Preparation steps

1.

Rinse and trim kohlrabi and cut each into 6 equal slices. Boil kohlrabi slices in salted water about 8 minutes and drain.

In a deep, wide bowl, beat egg yolks with 2 tablespoons water. In another deep, wide bowl, mix sesame seeds with 2 tablespoons water.

Season kohlrabi slices with salt and pepper. To assemble schnitzels, place kohlrabi slices on Tilsit cheese slices and top with Emmentaler cheese slices. Dip schnitzels in yolk mixture and coat with sesame seeds.

Melt butter in a large pan and sauté schnitzels over medium heat until golden brown.

Rinse lettuce, shake dry and tear into bite-size pieces. Mix sour cream, lemon juice, mustard, salt and pepper and drizzle over lettuce.

6.

Serve kohlrabi cheese schnitzels with salad on the side.
