1 Leek (diced)
1 carrot (diced)
1 stick Celery (diced)
1 small Zucchini (diced)
4 cups vegetable stock
½ cup peas
1 cup alphabet Pasta
1 cup shredded Spinach

Preparation steps

1.
Heat the oil in a large pan and cook the leek, carrot and celery for 5 minutes. stirring occasionally, until tender.

Add the courgettes and cook for a further 5 minutes.

Add the stock and bring to a boil. Reduce the heat and simmer for 10 minutes. Add the peas and pasta and cook for 5 minutes, stirring occasionally.
4.
Stir in the spinach and cook for 1 minute until wilted. Season to taste with salt and pepper. Leave to cool, then pour into a sealable jar and chill until needed.
