- 600 grams Jicama
- 2 scallions
- 150 grams Yogurt (low-fat)
- 1 organic Lime (juice)
- 2 Tbsps vegetable oil
- salt
- freshly ground peppers
- 1 pinch sugar
- 1 Tbsp finely chopped mint

Preparation steps
1.
For the salad: Peel the jicama and cut into matchsticks. Rinse the scallions and thinly slice into rings.

For the dressing: In a bowl, stir the yogurt with the lime juice and oil. Season with the salt and pepper to taste. Stir in a pinch of sugar.
For serving: In another bowl, toss the jicama with the scallions, dressing and mint until thoroughly combined. Season with salt and pepper to taste. Serve in bowls.
