Ingredients

For the apple sauce
4 Tbsps lemon juice
1 Tbsp sugar (is desired)
2 Apple (e. g. Boskop, peeled and diced)
1 stick cinnamon
candied Lemon peel
For the latkas
6 cups potatoes (peeled and grated)
1 onion (grated)
1 cup ground Matzo
1 egg yolk
vegetable oil (for frying)

Preparation steps

To make the apple sauce mix the lemon juice with 100 ml water, add the sugar and bring to the boil.

Add the apples the cinnamon stick and the lemon peel to the lemon mixture and simmer until the apple falls apart. Set aside and leave to cool. Remove the lemon peel and the cinnamon stick and stir occasionally.
3.
To make the latkas, mix together the potatoes, onion, flour and egg yolk until a thick mass forms. Season with salt and ground black pepper then break into small cakes and on a medium heat fry in a little oil on both sides until golden brown. Keep warm in the oven until all the latkas are finished. Serve with the apple sauce.
