- 1 Tbsp salt
- 2 Tbsps Wine vinegar
- 6 ½ cups red peppers (cut into equal chunks)
- 12 garlic cloves (peeled)
- 1 Tbsp pickled green Peppercorns
- 2 fresh bay leaves
- 1 Tbsp Poppy seeds
- vegetable oil (e. g cold-pressed olive oil)

Preparation steps
1.
Place the salt and vinegar in 1 litre of water and bring to the boil. Add the peppers and cook for 1 to 2 min - they should be cooked but still crunchy.
2.
Drain and transfer into a large jar (or multiple smaller jars) along with the garlic, peppercorns, bay leaves and poppy seeds.
3.
Fill with oil until everything is covered and close tightly. Store for at least two days in a cool dark place before consumption. If necessary add a little more oil.
