- ⅜ cup flaxseed
- fresh Lime juice
- ½ tsp Chili powder
- 2 Oranges (peeled, pith removed and divided into segments)
- 2 cups diced Watermelon
- 8 scallions (sliced)
- 1 Watercress (roughly chopped)
- 4 Tbsps sesame oil
- 16 ozs Salmon fillet (skinned)
- 1 ⅓ cups black Sesame seeds

Preparation steps
1.
Mix together the flaxseed oil, lime juice and chilli powder to make a dressing.
2.
Place the orange segments, watermelon, spring onions and watercress in a large bowl, pour over the dressing and mix gently. Arrange the salad on serving dishes.
3.
Heat the sesame oil in a large wide pan until smoking and cook the salmon for 30 seconds each side. Place the sesame seeds on a large plate and press the salmon on top to coat with the seeds on all sides.
4.
Cut the salmon into thick slices, place on top of the salad and serve.
