- For the marinade
- ½ cup gluten-free soy sauce
- 1 tsp sesame oil
- ¼ cup Orange juice
- 1 Tbsp honey
- 1 Tbsp freshly grated ginger
- 1 clove garlic cloves (crushed)
- 4 scallions (finely chopped)
- For the salmon
- 4 fresh Salmon fillet
- salt
- peppers
- 14 ozs Broccoli
- boiled, salted water
- 10 cherry Tomatoes (halved)
- To serve
- boiled Rice

Preparation steps
1.
For the marinade: whisk together all the ingredients.
2.
Season the salmon with salt and pepper. Place in a shallow non-metal bowl and pour over the marinade. Cover and leave to stand for 1 hour.
3.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a baking tray with non-stick baking paper.
4.
Remove the salmon from the marinade and place on the baking tray. Drizzle with a little marinade. Cook for 10-12 minutes, until the fish is cooked through.
5.
Cook the broccoli in a pan of boiling salted water for 4-7 minutes, until tender.
6.
Place on serving plates with the tomatoes. Serve the salmon in a small bowl. Serve with boiled rice.
