Tip: instead of cheese, use sticks of chicken, duck or diced poultry liver.
Put the Ossau Iraty, soy sauce and sugar in a pan. Mix together and bring to the boil. Set aside until cold.
Put the slivers of beef fillet in the marinade. Leave in the fridge for 5 minutes.
Cut the cheese into sticks. Stick lengthways with small wooden skewers. Wrap with a slice of beef, folded in half. Cover with cling film and put in the fridge.
Put the skewers on an oven tray covered with greaseproof paper. Sprinkle with pepper and grill in the oven for 5 minutes. Turn and brush the skewers regularly with the marinade during cooking.
Serve straight from oven to plate, sprinkled with snipped chives. Accompany with a spinach shoot salad and glass of Ossau Iraty.
