1 ¾ cups Almond flour
0.333 cup xylitol
½ tsp vanilla extract
1 tsp Almond extract
1 egg
1 egg white

Preparation steps

1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Line 2 baking trays with non-stick baking paper.

Put the almonds and xylitol in a food processor and process until combined. Add the vanilla and almond extract and pulse a few times.
3.
Add the whole egg and process until well combined. Add the egg white and continue to process until blended.
4.
Place teaspoonfulss of the mixture onto the baking trays and flatten slightly.
5.
Bake for 20-25 minutes until firm and golden. Cool on the baking trays for 15 minutes, then place on a wire rack to cool completely.
