Irish Liqueur and Chocolate Iced Lollies

Mix chocolate milk, espresso and chocolate syrup together and set aside.
Bring water to a boil, add gelatin powder, stir until powder is dissolved and let cool for 15 minutes. Add water/gelatin mixture to chocolate mixture and stir well.
To make popsicles, insert twelve popsicle sticks into popsicle molds, fill the mould with chocolate mixture and place in the freezer to set until frozen.
Place chopped cookie bits into a shallow bowl and set aside. Melt chocolate over a double boiler. Remove popsicles from freezer and very quickly dip the top of each popsicle into chocolate and then roll into chocolate cookie bits.
Place popsicles on a cookie sheet lined with a rack and refreeze just until the chocolate is hardened before serving.
