Ingredients

For the cake mixture
1 cup all-purpose flour
1 ¾ cups Almond flour
3 teaspoons Baking powder
½ teaspoon baking soda
cup soft butter
cup sugar
3 eggs
¼ cup Cherry jam (or jelly)
For the topping
1 cup soft butter (scant)
0.333 cup sugar
2 tablespoons Cherry syrup
1 cup cream cheese (drained)
1 ⅔ cups powdered sugar
red Food coloring

Preparation steps

1.
Heat the oven to 190°C (170°C in a fan oven), 375°F, gas 5 and line a muffin tin with paper cases.
2.
Mix together the flour, almonds, baking powder and the baking soda.
3.
Beat together the butter and the sugar. Add the eggs one-by-one and then quickly stir in the dry ingredients.
4.
Transfer the mixture to the paper cases, filling them only half full. Add 1 tsp of jam/jelly to each case and cover with more cake mixture.
5.
Bake for around 20 minutes, then remove from the oven and leave to cool for around 5 minutes. Transfer to a wire rack and allow to cool completely.
6.
To make the topping, mix together the butter, sugar and the syrup, Fold in the cream cheese and then add as much icing sugar as necessary to create a pipe-able mixture. Add food colouring as desired.
7.
Transfer the butter cream to a piping bag and and pipe onto the cupcakes. Garnish with the cherries.
