- ¼ cup unsalted butter
- 2 Tbsps fresh, fine breadcrumbs
- ⅓ cup all-purpose flour
- ½ tsp English mustard powder
- 1 pinch cayenne pepper
- 1 ⅓ cups milk
- 1 cup strong Cheese (grated)
- 4 large eggs (separated)

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease 6 ovenproof ramekins and sprinkle with the breadcrumbs.
2.
Melt the butter in a pan and add the flour, mustard and cayenne pepper. Cook for 2 minutes, then gradually add the milk, stirring, until the mixture comes to a boil. Boil for 2 minutes, until very thick and coming away from the sides of the pan.

Remove from the heat and stir in the cheese and egg yolks and season to taste with salt and pepper.
4.
Whisk the egg whites until stiff. Mix a spoonful into the cheese mixture to loosen, then gently fold in the rest. Spoon into the ramekins just up to the rim. Run your finger around the edge of the ramekins.
5.
Bake for 8-10 minutes until risen and golden. Serve immediately
