- 2 Tbsps Ghee (or clarified butter)
- 3 Red onions (finely chopped)
- 1 walnut-sized ginger (finely chopped)
- 2 garlic cloves (finely chopped)
- 2 Tbsps tomato puree
- 1 tsp ground cilantro
- ½ tsp fennel seeds
- ½ tsp ground Cumin
- 1 tsp Chili powder
- 1 tsp Turmeric
- 1 Tbsp brown sugar
- 3 Tbsps lemon juice
- 4 cups Monkfish (cut into large pieces)
- 8 sprigs cilantro (roughly chopped)

Preparation steps
1.
Heat the ghee in a high skillet and fry the onions, ginger and garlic on a medium heat for 3 minutes, stirring continuously.
2.
Add the tomato puree, ground coriander, fennel, cumin, chili and turmeric and fry for another minute. Sprinkle with sugar and allow to caramelize. Stir in 250 ml water and the lemon juice. Bring to a boil and season with salt and pepper.
3.
Add the fish to the sauce and cook on a medium/low heat for 6-8 minutes. Stir in the coriander, season with salt, ground black pepper and lemon juice and serve with basmati rice.
