6 ½ cups Sweet potato (peeled and roughly chopped)
¼ cup butter
2 sprigs fresh cilantro (leaves only)

Preparation steps

1.
Boil the sweet potato in a large pan of salted water until tender.

Drain well then return to the pan with the butter. Mash with a fork and season with salt and pepper.
3.
Roughly chop the coriander, reserving a few leaves for the garnish. Stir the chopped leaves through mashed sweet potato and serve in a warm bowl, garnished with the reserved leaves.
