2 Tbsps candied Orange peel
2 Tbsps candied Lemon peel
1 cup plain flour
1 cup ground Nut e. g. almonds and hazelnuts (approx. quantity)
1 tsp Mixed spice (or gingerbread spice mix)
1 egg
cup Rum
2 Tbsps Vanilla sugar
2 tsps vanilla extract
cup brown sugar
35 Wafer (diameter 5 cm)
To decorate
cup powdered sugar
1 Tbsp lemon juice
1 cup Dark chocolate (min. 50% cocoa, roughly chopped)

Preparation steps

1.
Place the candied peel with 1 tbsp flour in a blender and chop. Mix the nuts with the remaining flour and lebkuchen spice.

Beat the egg with the rum, vanilla sugar, vanilla essence and brown sugar. Thoroughly mix in the candied fruit and the nuts with a dough scraper. The dough should be easy to mould; the quantity of nuts may be varied.
3.
Place the wafers on a baking tray lined with baking parchment. Place approx. 1 tbsp of dough on each wafer. Smooth the lebkuchen with a wet palette knife and chill for approx. 1 hour.
4.
Heat the oven to 200°C (180°C in a fan oven) 400°F, gas 6.

Bake the lebkuchen for approx. 20 minutes until golden brown.
6.
Mix the icing sugar and lemon juice. Fill the icing into a freezer bag and cut off one very small corner. Melt the chocolate in a bowl over a pan of hot (not boiling) water.
7.
Remove the lebkuchen from the oven, spread with the chocolate and leave to set. Then decorate with icing and leave to set again.
