- 2 cups Almond flour
- 2 eggs (lightly beaten)
- 1 tsp Lemon extract
- 2 cups granulated sugar
- 2 cups all-purpose flour (sifted)
- 1 pinch salt
- For Filling
- 1 cup Lemon Marmalade (or jelly)
- For Glaze
- 1 cup powdered sugar
- 1 Tbsp lemon juice (or lemon liqueur)
- Candied fruit (chopped)

For Cookie Dough:

In a large bowl, with clean hands, mix together ground almonds, beaten eggs, lemon extract, sugar, flour and salt. Divide the dough into two equal portions. Roll each portion into logs about 1 1/2-inches in diameter. Wrap in plastic or waxed paper and chill in the refrigerator for at least 3 hours or until firm.

Preheat oven to 325º F. Line two baking sheets with parchment paper.

Cut chilled logs into slices about 1/8-inch thick and place on prepared baking sheets. Bake for about 8 minutes or until edges are slightly golden. Allow to cool on wire racks.

Put a dollop of jelly on the bottom of half of the cookies and sandwich two cookies together.

For Glaze:

Combine confectioners' sugar and lemon juice or liqueur together one tablespoon at a time, until a smooth, spreadable consistency is achieved. Drizzle or spread glaze over each sandwich cookie top. Garnish with chopped candied fruit. Serve.
