1 Rack of lamb (with rib bones, 800 grams)

2 Tbsps vegetable oil
4 sprigs thyme
5 Tbsps honey

Preparation steps

1.

Preheat the oven to 160°C (approximately 325°F). Rinse the lamb, pat dry and scrape the rib bones clean with a knife. Season the meat generously with salt and pepper and brown in a hot roasting pan with oil on all sides.

Rinse thyme, shake dry, pluck off the leaves and chop finely. Warm honey in a pan, add the thyme, mix well and brush the lamb with it. Place in the preheated oven and roast for 20-25 minutes. Baste frequently with the thyme honey. Remove and cut into chops before serving.
