250 grams Raspberries
250 grams red Currants
300 grams Strawberries
2 Tbsps cornstarch
350 milliliters red Currant juice
1 Orange (juice and zest)
100 milliliters dry Red wine
60 grams sugar
1 Vanilla bean
1 Cinnamon stick

Measure all ingredients.

Rinse the berries, trim and drain. Remove the currants from the stems.

Rinse the strawberries.

Cut the strawberries into quarters and add tthe remaining fruit in a bowl.

Mix in the cornstarch with 3 tablespoons currant juice.

Combine the rest of the juice with the orange juice, wine and sugar in a saucepan.

Cut the vanilla bean in half lengthwise and scrape out the seeds. Add the cinnamon stick and orange peel to the liquid.

Pour cornstarch mixture and boil while stirring.

Add 1/3 of the fruit, simmer for 3-4 minutes and remove from heat.

Strain the fruit with the liquid through a fine sieve into a bowl and squeeze.
