- 3 ½ liters water
- 350 sugar
- ½ organic lemon (juiced)
- 20 Elderflower
- 2 organic Limes (thinly sliced)

Preparation steps
1.
Bring the water to a boil, and let cool.
2.
Mix the sugar, lemon juice, elderflowers, and thinly sliced lime in a tall jar.
3.
Pour the water over the mixture and stir until the sugar has dissolved.
4.
Cover the with a paper towel or cheesecloth.
5.
Leave the mixture on a sunny windowsill for 2-3 days. If bubbles begin to rise, the drink is ready.
6.
The elderflower champagne doesn't always work. Be careful when you attempt to make it.
7.
If mucus begins to form on the drink, discard and don't try to consume it.
